Community members welcome back Food Truck Friday

Central Michigan University Research Corporation, an on-campus organization devoted to helping small businesses, hosted "Food Truck Friday," for the second year today in the CMURC parking lot. 

The event was started last year by the organization to help entrepreneurs launch and network their businesses with the community. Elissa Richmond-Gagne, marketing and public relations director for CMURC, said Food Truck Friday was successful last year and should be this year as well.

"The event is starting out very well. It gets busier as noon approaches," Gange said. "We'll be hosting this event every Friday rain or shine. If it's anything like last summer, the momentum will pick up every week as more trucks get a chance to come out."

Three food trucks showed up today: Killer Hibachi, Los Jalapeños and Pineapple Express. Troy Simmer, a Central Michigan University employee, said he's been to food truck Friday four times. 

"I love the variety of food available through Food Truck Friday," Simmer said. "There aren't a lot of places on campus to get food. My favorite food truck so far is Pineapple Express; I love the walking tacos."

Pineapple Express is under new ownership because its previous owner, Troy Prill, moved to Colorado after graduating. New owner Ryan Swindlehurst from Marysville said he helped Prill with the food truck in the past and was happy to take it over. 

"They contacted Troy last year about Food Truck Friday and he enjoyed doing it," Swindlehurst said. "This is my first time working the event, and so far it's going well. It's cool to have other food trucks participate. It's nice to see others enjoy what you like doing."

Food Truck Friday will be held every Friday throughout the summer from 11 a.m. to 2 p.m. in the CMURC parking lot.
