Food Truck Friday to return with cupcake showdown for first week

Food Truck Friday will kick of its first week of the summer with a showdown between GreenTree Cooperative Grocery and Little Miss Cupcake, from 11 a.m. to 2 p.m. on Friday. Both vendors will be offering a variety of cupcakes. 

Food Truck is held every Friday of the summer in the parking lot of the Central Michigan University Research Corporation. The series will continue until the end of August.

The CMURC reached out to local food trucks and caterers at the beginning of the summer to develop the line-up for each week. GreenTree and Little Miss Cupcake volunteered to be the first competitors. This will be Little Miss Cupcake's first time at the Food Truck Friday event. 

The CMURC puts on Food Truck Friday to introduce locals to new food options from around the community, and to boost the local economy, said CMURC public relations executive Kirsten Simmons.

"Part of our work is supporting businesses in the region, which we're able to do for food businesses in particular through this event," Simmons said. "For the people who come, it's an opportunity to sample different types of food, and enjoy the summer weather."

In addition to the two competitors, six other local food vendors will be participating. Former competitors like Soul Sista's, Dog Central, Chase's Place and John Reynolds, Caterer will be present, along with newcomers The Cruisin' Chef and Phat Matt's. Phat Matt's will be offering barbecue items including pulled-pork tacos, brisket tacos and asian chicken tacos. The Cruisin' Chef, which represents The Ginkgo Tree Inn, will be offering a variety of specialty items, including sandwiches. 

The list of vendors for next week will be finalized and announced at the end of the day on Friday.
