Bigby Coffee set for December or January opening on Bluegrass

Students returning for the spring semester will have another way to satisfy their caffeine craving.
Bigby Coffee, formally called Beaner's Gourmet Coffee, plans to open in Mount Pleasant by the end of December or the first week of January, said owner Mike Densmore.
Densmore said the process of opening the shop does not come without headaches.
"We're just having some issues with getting the contractor there as far as his manpower and stuff, but everything is looking good and we're about ready to go," he said.
Despite the setbacks Densmore said the operation is on schedule.
"We're just very enthused about coming to Mount Pleasant," he said. "We definitely can't get there fast enough, but there is a lot of stuff that has to get done."
Despite a wide variety of coffee shops in Mount Pleasant, Joneil Cook is optimistic about Bigby's chances.
"There's such a coffee craze right now," said Cook, interim president of Mount Pleasant's Chamber of Commerce. "I think people are drinking all the different varieties whether it's lattes or chai teas, everyone has their favorite drink and it seems like a big business that's growing and I would say there's probably room for more."
Densmore said he hopes his business will benefit from the influx of businesses opening in the Union Square strip mall across the street from Wal-Mart, 4028 E. Blue Grass Road.
Bigby's will join Coco Joe's Beach House, 4588 E. Bluegrass Road, Bar-B-Cutie and Pizza King as just a few of the establishments that have opened or plan on opening in the same area on Bluegrass Road.
Cook said as a chain, Bigby's name recognition could help its business.
"I had heard about Beaner's prior to them coming here," she said. "I knew about the chain by being in different areas. I'm sure they'll be very prepared to come to the Mount Pleasant market."
Densmore said he anticipates opening under the name Bigby Coffee.
