Kitchen Central Ep. 5 | Sweetened Apple Pie Oatmeal

In this season finale of Kitchen Central, Sarah and Emily show us how to make sweetened apple pie oatmeal! Another great, sweet recipe for a gathering or a snack! 2 tart or sweet apples (peeled, cored and evenly sliced) 1 tsp honey/maple syrup (add extra while cooking oats if desired) 1/4 tsp ground cinnamon (add extra for optional topping at the end) 1 tsp lemon juice 1 cup old-fashioned rolled oats  1 cup water 1 cup of milk (or dairy-free option) 1 pinch salt 4 whole dates (finely chopped) - Can also use ¼ cup of raisins or any dried fruit Instructions Preheat oven to 350 degrees F (176 C). Line a baking sheet with parchment paper and toss apples with lemon juice, cinnamon and honey. Bake for 5 minutes then roll over parchment paper and tuck it in and fold the edges so they're in a "pocket" to trap in moisture. Cook for 10-15 minutes more (20 minutes total) until soft. Set aside. In a small saucepan over high heat, add oats, pinch salt, water and milk (or almond milk) and stir. Optionally, you can also add cinnamon and maple syrup to the cooking oats. When it comes to a boil, reduce to low-medium heat and cook until thick and creamy. Add the chopped dates (or dried fruit) a few minutes after you reduce the heat so they can soften and sweeten the oats. Once thick, remove from stove top. Add a little milk if it's too thick for your liking. Arrange 1/3 cup baked apples in a serving bowl along with the cooking oatmeal. Other toppings may include, walnuts, nut butter, cranberries, flaxseed, honey, maple syrup, or cinnamon. Recipe courtesy of Minimalist Baker Thanks for watching! Kitchen Central Mini Episode 2 | Garlic Herb Chicken and Sweet Potato Sheet Pan

Looking for something simple, quick, and tasty for that get together with some friends? In this mini episode of Kitchen Central we show you how to make this delicious garlic herb chicken and sweet potato sheet pan receipe! Ingredients 1 large, sweet potato, cut into cubes 1/4 cup olive oil, divided 4 cloves garlic, crushed or finely chopped, divided 2 teaspoons dried oregano, divided 2 teaspoons basil, divided 2 teaspoons parsley, divided Salt and freshly ground black pepper 1lb (16oz) boneless skinless chicken breasts, cubed 1 large head of broccoli cut into florets (about 3 cups of florets) 1 red pepper, deseeded and cut into wedges 1 medium red onion, cut into wedges Instructions Preheat oven to 400°F ( 200°C). Line a large, rimmed baking sheet / tray with parchment paper or aluminum foil. Arrange sweet potatoes on the tray; drizzle with 1 tablespoon of oil (or enough to evenly coat), 1 crushed garlic clove, 1/2 teaspoon each of oregano, basil and parsley. Toss well to coat completely. Season with salt and pepper and spread into an even layer. Cover with foil and roast in hot oven for 10 minutes, while preparing the remaining vegetables. The sweet potatoes will just begin to soften at this time (they will still be fairly hard on the inside, but soft on the outside). Remove from the oven and arrange the chicken, broccoli, peppers, and onion around the sweet potatoes. Drizzle with remaining oil; add the garlic and herbs. Toss everything together to completely coat in the oil. Season with extra salt and pepper to taste. Return to the oven and bake for 15-20 minutes, turning chicken and other ingredients once while cooking, until the chicken is cooked through to 165 degrees F in the middle, and the other vegetables are cooked through. Serve immediately OR allow to cool to room temperature, divide into 4 containers and you have meals ready for the week! Kitchen Central Ep. 4 | Vegan Gnocchi with Spinach and Tomatoes

Today we're with Alexis and Arriana as they show us how to make a delicious Vegan Gnocchi with Spinach and Tomatoes! The great part about this meal is you can substitute dairy free products and still have an amazing dish! Ingredients: 4 ounces of grape tomatoes 1 teaspoon garlic powder 4 tablespoons of dairy-free cream cheese 5 ounces of spinach 1 teaspoon of chili flakes ¼ cup panko breadcrumbs One package of gnocchi Vegetable stock concentrate ¼ cup of dairy-free shredded cheese 2 tablespoons of olive oil Salt Pepper Steps: Bring a medium pot of salted water to a boil. Wash and dry produce. Halve tomatoes. Melt 1 teaspoon of olive oil in a pan over medium heat. Add breadcrumbs. Stir until toasted, for about 2-3 minutes. Stir in a ½ teaspoon of garlic powder, for about 30 seconds. Transfer into plate for later use. Once water is boiling, add gnocchi to the pot. Cook until tender, 3-4 minutes. Drain. In another pan, melt 1 TBSP olive oil in a pan over medium heat. Add ½ teaspoon of garlic powder until fragrant. Stir in ⅓ cup of water, stock concentrate and dairy-free cream cheese. Bring to a simmer, stirring, until creamy and combined, 2-3 minutes. Season with salt and pepper. Stir tomatoes and spinach into pan with sauce. Cook, stirring, until spinach is wilted and tomatoes are softened, 3-4 min. Stir in gnocchi with the sauce until coated thoroughly. Add water if needed. Taste and season with salt and pepper.
