MUNCHIES IN MINUTES: Mexi Triscuit


Mexi Triscuit crackers are fabulous and can be done in minutes.

These munchies are easy to make, and I love them when I am need of something quick and in my opinion healthy. Though healthy to me is probably not a USDA recommendation.

I came up this tasty snack combination just on a whim of what would go good on these Rosemary and olive oil herb crackers. I wanted spicy and delicious and I wanted fast like always.

I choose Mexican, because to me going South of the border for a snack is always satisfying.

The first thing I do is spread refried beans across the cracker and then top with shredded cheese and then place them in a toaster oven on broil or in a oven on the broil setting. It will not be long before the cheese is melted and bubbly, so pay attention.

After that I top with diced tomato, diced onion and fresh sliced jalapenos peppers they make the dish. It is a mouthful of flavor when you are eating these and so perhaps I suggest a tasty margarita to cool off the heat while enjoying your munchies with friends.

Ingredients:

24-Triscuits (flavor your own choice)

2-Fresh Jalapenos sliced washed and sliced thin

1 can of Vegetarian refried Beans

2 cups of shredded cheese

1-diced tomato

1 cup of diced onion
