Kitchen Central Ep.1


Kitchen Central is a cooking show created by students for students. Cooking in college can seem bland, expensive, and difficult, but we are here to prove you wrong! Follow along every other week as we teach you how to prepare a healthy, inexpensive meal to spice up your week. This week we will be preparing Southwest Pico Chicken with Avocado Hummus: Ingredients -2 Chicken Breasts -1 T. Garlic (Granulated is best. Use ½ Tablespoon if using fresh garlic) -1 t. Paprika -½ t. Cumin -¼ t. Salt -1 T. Olive Oil Hummus -1 Avacado -1 Can Beans (Garbanzo, Great Northern Beans, etc. Any white bean will do!) -2 T. Cilantro (Heaping) -Juice from 1 lemon -¼ C. Bean Liquid (Aqua Fava) Salt to taste Pico -2 Medium Tomatoes -1 Jalapeno -⅓ C. Red Onion Salt to Taste Equipment -1 Pot -2 Cutting Boards -2 Knifes -1 Baking pan -1 Blender or food processor -1 Small Bowl for Spices -3 Medium Bowls -Measuring Cups -Measuring spoons -Serving spoons Directions Rice In a medium-size pot, add 2 cups of water and heat over the stove until the water is boiling Add 1 Cup of rice Cook for 40 minutes (Stir every 10-15 minutes) When cooked, serve with the meal ]South West Chicken Preheat oven to 425F On a cutting board, Clean chicken breasts (Cut off excess white fat) Place chicken breasts in a baking pan Drizzle Olive Oil on both sides of the chicken In a small bowl, combine Garlic, Paprika, and Cumin. Add mixture to one side of the chicken. Rub in the spices until even. Repeat on the other side of the chicken. Place chicken in the oven for 20-25 minutes or until it reaches 165F Tomato Picco On a cutting board, dice the red onion, jalapeno, and tomatoes. Place red onion, jalapeno, and tomatoes in a bowl and stir Add salt to taste[Text Wrapping Break][Text Wrapping Break]Note: Leave the jalapeno seeds in the Picco mix to make add some extra heat! Avocado Hummus Open the canned beans and drain bean liquid (Aqua Faba) into a bowl. Set bowl aside. In a blender or food processor, add one can of strained beans Add half (⅛ Cup) of the bean liquid (Aqua faba) Blend until beans are well blended and creamy, then stop the blender. Cube and scoop the avocado into the blender Squeeze the lemon and add lemon juice, cilantro, and the remaining bean liquid (Aqua faba) Blend until creamy, scoop into a medium bowl and serve Add salt to taste[Text Wrapping Break] Ways to use leftover Picco and hummus In a wrap On a salad With raw vegetables such as cucumbers and carrots On toast With crackers Thanks for watching!
