Kitchen Central Ep. 4 | Vegan Gnocchi with Spinach and Tomatoes


Today we're with Alexis and Arriana as they show us how to make a delicious Vegan Gnocchi with Spinach and Tomatoes! The great part about this meal is you can substitute dairy free products and still have an amazing dish! Ingredients: 4 ounces of grape tomatoes 1 teaspoon garlic powder 4 tablespoons of dairy-free cream cheese 5 ounces of spinach 1 teaspoon of chili flakes ¼ cup panko breadcrumbs One package of gnocchi Vegetable stock concentrate ¼ cup of dairy-free shredded cheese 2 tablespoons of olive oil Salt Pepper Steps: Bring a medium pot of salted water to a boil. Wash and dry produce. Halve tomatoes. Melt 1 teaspoon of olive oil in a pan over medium heat. Add breadcrumbs. Stir until toasted, for about 2-3 minutes. Stir in a ½ teaspoon of garlic powder, for about 30 seconds. Transfer into plate for later use. Once water is boiling, add gnocchi to the pot. Cook until tender, 3-4 minutes. Drain. In another pan, melt 1 TBSP olive oil in a pan over medium heat. Add ½ teaspoon of garlic powder until fragrant. Stir in ⅓ cup of water, stock concentrate and dairy-free cream cheese. Bring to a simmer, stirring, until creamy and combined, 2-3 minutes. Season with salt and pepper. Stir tomatoes and spinach into pan with sauce. Cook, stirring, until spinach is wilted and tomatoes are softened, 3-4 min. Stir in gnocchi with the sauce until coated thoroughly. Add water if needed. Taste and season with salt and pepper.
